HORSERADISH CRUSTED SALMON & BABY ARUGULA

INGREDIENTS:

(2) 6oz filet of salmon, boned and descaled

(4) oz baby arugula

(1/2) cup bread crumbs

(3/4) stick salted butter

(2) T finely chopped scallions, white and green parts

(1/4) cup prepared horseradish

(2) T grated parmesan cheese

(1) lemon, juice and zest - divided

1/2 t freshly ground black pepper

1/4 t kosher salt

PREPARATION:

  • Smear some of the butter into a baking dish, lay salmon on top and squeeze juice of lemon over the fish.

  • Mix all other ingredients together to form crust, and press evenly into the salmon to create the crust.

COOKING:

  • Cook at 400 degrees for 14 minutes, and then raise the oven to 480 and cook for an additional 6 minutes to make sure crust is fully cooked and nicely browned.

SERVING:

  • Toss arugula with a bit of lemon juice, olive oil, salt and pepper.

  • Serve fish on top of arugula, and enjoy!
