HORSERADISH CRUSTED SALMON

HORSERADISH CRUSTED SALMON & BABY ARUGULA
INGREDIENTS:
(2) 6oz filet of salmon, boned and descaled
(4) oz baby arugula
(1/2) cup bread crumbs
(3/4) stick salted butter
(2) T finely chopped scallions, white and green parts
(1/4) cup prepared horseradish
(2) T grated parmesan cheese
(1) lemon, juice and zest - divided
1/2 t freshly ground black pepper
1/4 t kosher salt
PREPARATION:
Smear some of the butter into a baking dish, lay salmon on top and squeeze juice of lemon over the fish.
Mix all other ingredients together to form crust, and press evenly into the salmon to create the crust.
COOKING:
Cook at 400 degrees for 14 minutes, and then raise the oven to 480 and cook for an additional 6 minutes to make sure crust is fully cooked and nicely browned.
SERVING:
Toss arugula with a bit of lemon juice, olive oil, salt and pepper.
Serve fish on top of arugula, and enjoy!
