WHITE BEAN TURKEY CHILI

WHITE BEAN TURKEY CHILI
INGREDIENTS:
(2) t olive oil
(1) pound ground turkey, (dark meat works best)
(1) large onion, small dice
(3) poblano peppers, seeded and diced small
(1) jalapeño, seeded and diced fine
(1) qt turkey stock
(1) t ground paprika
(1) T ground cumin
(6) cloves garlic, finely minced
(1) T tomato paste
(½) t Rockerbox yellow onion dust
(½) t Rockerbox garlic flakes
(1) dried bay leaf
(1) can white beans (I used cannellini)
(1) can diced roasted green chilis
(6) small yukon gold potatoes, large dice
(½) bunch cilantro, leaves picked
(1) lime, juiced
(¼) cup cotija (optional)
PREPARATION + COOKING:
In a large heavy bottom pot, add olive oil and brown ground turkey over medium high heat until cooked through and nicely browned - about 5-7 minutes.
Add spices and stir to combine + add onion, garlic, peppers and season with salt and pepper.
Continue cooking until onion is softened, about 5 minutes. Add tomato paste and green chilies - stir to combine and add stock.
Bring to a simmer and cook for 15 minutes, add in potatoes and simmer another 15 minutes.
Add in white beans and simmer for another 15 minutes. Taste for seasoning, and adjust salt and pepper as needed.
When finished, mix in half cilantro and half cotija + juice of the lime.
SERVING:
Spoon into bowls, top with picked cilantro leaves + cotija cheese, serve with lime wedges on the side.
