GRILLED STEAKS WITH DIJON BUTTER + POTATOES/GREEN BEANS

INGREDIENTS:
(2) 6oz shell steaks
(2) cups green beans, ends trimmed and cut in half
(10) small yukon potatoes, cut into large chunks
(1) T Rockerbox raw garlic dust
(1) T ground paprika
(1) t Rockerbox green onion dust
(1) t Rockerbox raw onion dust
(½) t ground black pepper
(¼) t pul biber or mild chili flake
(3) T oil
(2) cloves garlic, sliced paper thin
(4) T butter
(1) t picked lemon thyme leaves
(2) T stone ground or dijon mustard
Salt and pepper
PREPARATION:
Mix all spices together to create spice rub, massage evenly to all sides of steaks. Set aside covered for 30 minutes. (You can do this 24/48 hours prior for deeper flavor)
Cut potatoes and clean green beans, prepare garlic and thyme - set all aside.
Bring a pot of water to a boil, add potatoes and cook until fork tender about 10 minutes then add the green beans and cook 2-3 minutes until softened. Pour into a colander to drain and set aside for a moment.
In a large saute pan, heat (1) T of oil with (2) T of butter, add sliced garlic and cook until light golden brown.
Add the potatoes/green beans into the saute pan, season with salt and pepper and add the lemon thyme.
Mix (2) T of softened butter in a small dish with (2) T mustard, whisk to combine and set aside.
COOKING:
Preheat grill or grill pan to high heat, grill steaks to desired doneness and pull off heat to rest.
SERVING:
Spoon potatoes + green beans onto plate, slice steaks and spoon dijon butter over the top.
